I haven't noticed a difference in flavor since using this improver. However, my wheat bread is less dense and my loaf turns out much better. However, I use about twice what they recommend, so experiment. Also, they say to refrigerate wheat flour, but it rises better if you bring it to room temperature before making your bread. However, you can order it directly from King Arthur for $9--considerably less than you would pay here.My whole grain bread is definitely rising higher and is of a less dense taste but this did not make quite the difference I had hoped! I used the amount indicated for my recipe but I am not getting the size loaf that I see from the bread they make at the bakery in the store. However, my bread is waaaay less dense and much taller then without it. I will have to play around with the amount I use. Overall I will buy this again when I am out.The expiration date was one month after I received it. I needed it and Had to use it, but for over $20 it should be good for at least 6 months.King Arthur brand is tops, so I bought this expecting good results. I know there are additives in the grocery store that do the same thing. I don’t know yet if this works better, but you won’t be disappointed. One small quibble: the zip lock on the bag doesn’t seal, so I keep it in a zip lock freezer bag. First world problems, I know.
