I am gluten intolerant and this is the reason for my purchase of this flour. No reactions to this flour because for one thing it does not contain Glyphosate (main ingredient in RoundUp weed killer) and is milled from Spring Wheat the old fashioned way. This Company (Antimo Caputo) has been making flour for many many years and in my estimation, they know exactly what they're doing. I use it for bread/rolls, pastry (pie crust which tastes the best ever), pizza crust which is also very very good. Love the packaging. I have a bread machine (SKG brand) purchased on Amazon and these little bags are just perfect. Takes 1/2 bag (each bag is 1,000 grams) for a 2 lb loaf of bread that tastes heavenly. Have made loads of bread over many years from No Knead to Sourdough to regular kneaded bread dough and without a doubt the fineness of this Antimo Caputo flour (it's a pastry flour) and flavor after baked cannot be beat. Besides I never have stomach issues when eating anything I make from this flour. This flour (as well as their pizza flour) is very popular for making pizza as it is super easy work with forming the pizza crust, bakes up quickly, and is very tasty.
