I like this knife and recommend it to anyone looking for a high quality, moderately priced boning knife.I tried out the Restaurantwear Boning Knife to piece & debone a raw, whole chicken. It performed exceedingly well. The 6" knife was sharp and cut with ease. What stands out is the thin, slightly flexible blade. Compared to another boning knife I've used for several years, a Forged Japanese Damascus Steel, this knife was able to cut & debone the chicken with better precision, I believe, because of the thin & flexible stainless steel blade. The Restaurantwear's soft TPE handle also proved worthy by allowing me to maintain control of the wet meat. There was also excellent overall weight & balance. Immediately afterward, washing up was a breeze, and both the stainless steel blade & the TPE handle were totally clean & free of stains, once complete (2nd photo.)From what I can saw today, it should be reliable, long lasting and simple to maintain. Though the product description states it's "dishwashable," I hand wash & dry blades & store them sheathed. The brand offers a 6.5"x2" plastic, BPA-free & felt-lined sleeve that's sold separately. The sleeve was easy to find searching Amazon with these keywords "Restaurantwear RWT0957B."The product is marked "Made in China."The knife was delivered in normal store packaging that consists of a clear hard plastic (with hanger hold,) outer, and printed cardboard liner. I really like that a small, semi-transparent silicone blade-tip protector (see the photo) was covering the end of the knife. The tip fell off while sliding the knife out of the package, but was easy to find where it landed, just below me on the floor. The tiny part might be a choking hazard, I suggest keeping an eye on it while removing the knife from the package.In closing: Though the product was provided free of charge under Amazon's Vine program, I used the item as I would any purchase, and wrote an unbiased, honest review based on my experience.*Note: I used a tempered glass cutting board while deboning the raw chicken, not shown.
