First: This pan is number 345854 in the Matfer Bourgeat Inc. product catalog. There is no 340854 pan, as it was labeled when I ordered this pan. I ordered the pan to see if it was the 345854 pan, and it is.I made one loaf of Gluten Free Yeast Bread in this Matfer Bourgeat 340854 Exopan Bread Mold with Lid. It browned well, and was done after baking for one hour at 350 degrees, covered with foil after 45 minutes. I left the baked bread in the pan, covered with the foil, in the oven (turned off) for another hour. I cooled the bread in the pan for an hour.Before use, I brushed a light coating of olive oil on all baking surfaces of the pan. The pan is non-stick, and my bread loaf came out easily, with little clean up for the pan. I put the pan in the still warm oven to make sure it was dry before storing. I do that with all of my metal baking utensils.I had trouble with under-baked Gluten Free Yeast Bread in my glass pans, lined with foil-backed parchment paper.I am still trying new recipes with different Gluten Free flours. Each loaf I have made has been a different recipe.The loaf I made in this EXOPAN BREAD MOLD WITH LID (Pullman pan) rose higher than the edges, so I could not use the lid for the pan. Next time, I will know to use less dough, and try using the lid to bake the bread.I laugh at the term "bread mold". Don't want bread mold on any bread on the shelf!
